These Caramel Turtle Cupcakes are perfect for festive gatherings. Featuring a fluffy base, creamy chocolate ganache, gooey caramel, and crunchy pecans, they are pure magic in every bite!
π Ingredients
For the Batter (Makes 12 cupcakes):200g All-purpose flour
120g Brown sugar
2 Large eggs
120ml Milk
100ml Sunflower oil (or any neutral vegetable oil)
5ml (1 tsp) Vanilla extract
7.5g (1½ tsp) Baking powder
1 pinch Salt
For the Topping:
150g Dark chocolate
100ml Heavy whipping cream
50g Toasted pecans (chopped)
100g Caramel sauce/liquid caramel

1️⃣ PreheatingPreheat your oven to 180°C (350°F). Line a cupcake/muffin tin with paper liners.
2️⃣ Making the Batter
In a large bowl, whisk the eggs and brown sugar until the mixture is light and frothy. Add the milk, oil, and vanilla extract, mixing well. Sift in the flour, baking powder, and salt. Fold them in gradually until you have a smooth, consistent batter.
3️⃣ Baking
Distribute the batter into the liners, filling them about ¾ full. Bake for 18–20 minutes, or until a toothpick inserted into the center comes out clean. Transfer them to a wire rack to cool completely.
4️⃣ Preparing the Ganache
Heat the heavy cream in a small saucepan until it just begins to boil. Remove from heat immediately and add the chopped dark chocolate. Stir continuously until the mixture is smooth, glossy, and fully melted.
5️⃣ Assembly
Spoon a tablespoon of the chocolate ganache over each cooled cupcake. Sprinkle with the toasted pecans and drizzle generously with the caramel sauce.
