Cottage Cheese & Spinach Crustless Quiche

Ingredients

1½ cups Cottage cheese

4 Large eggs

1 cup Sautéed spinach and chopped onion (well-drained)

½ cup Shredded mozzarella cheese

A pinch of Nutmeg

Instructions

Preheat & Prepare:

Preheat your oven to 180°C (350°F). Lightly grease a 9-inch pie dish or baking pan with olive oil or non-stick cooking spray.

Mix the Base:

In a large mixing bowl, whisk the eggs until smooth. Stir in the cottage cheese, shredded mozzarella, and the pinch of nutmeg.

Combine:

Fold in your sautéed spinach and onions. Tip: Ensure the spinach is squeezed dry before adding it to avoid a watery quiche.

Bake:

Pour the mixture into your prepared dish. Bake for 30–35 minutes, or until the center is set and the top is lightly golden brown.

Cool & Serve:

Let the quiche rest for about 5–10 minutes before slicing. This helps the texture firm up for the perfect slice.
