Honey Lime Chicken and Avocado Rice Stack
A vibrant, high-protein meal that’s as beautiful as it is delicious.
Ingredients
For the Chicken
2 boneless, skinless chicken breasts (sliced into strips or bite-sized cubes)
2 tbsp Honey
2 tbsp Soy sauce
2 tbsp Fresh lime juice
1 tsp Lime zest
1 tbsp Olive oil
Salt and pepper, to taste
For the Avocado Rice & Layers
2 cups Cooked Jasmine or Basmati rice (kept warm)
1 large Ripe avocado (diced or mashed)
1/4 cup Fresh cilantro (chopped)
1 tbsp Lime juice (for the rice)
1/2 cup Fresh mango or tomato salsa (optional, for a top layer)
Instructions
Marinate the Chicken: In a bowl, whisk together the honey, soy sauce, lime juice, lime zest, salt, and pepper. Add the chicken strips and toss to coat. Let it marinate for at least 10–15 minutes.
Prepare the Rice: While the chicken marinates, toss the cooked rice with cilantro and 1 tbsp of lime juice. If you prefer a creamier base, you can gently fold in half of the diced avocado into the rice.
Cook the Chicken: Heat olive oil in a large skillet over medium-high heat. Add the chicken and the marinade. Cook for 6–8 minutes, stirring occasionally, until the chicken is cooked through and the sauce has reduced into a sticky, golden glaze.
Assemble the Stack:
Place a large circular food mold (or a cleaned-out tin can with both ends removed) in the center of a plate.
Bottom Layer: Pack about 1/2 cup of the lime-cilantro rice into the bottom. Press down firmly with a spoon.
Middle Layer: Add a thick layer of diced avocado.
Top Layer: Finish with a generous serving of the glazed honey-lime chicken.
The Reveal: Gently lift the mold straight up to reveal your perfect stack. Garnish with extra lime wedges and a sprinkle of cilantro.
