Gourmet Teriyaki Chicken & Pineapple Foil Packets
This "all-in-one" meal combines juicy chicken breasts with the vibrant sweetness of fresh pineapple and crisp vegetables, all sealed in a foil packet to lock in every drop of flavor.

Ingredients
The Base:2 boneless, skinless chicken breasts (left whole or cut into thick medallions)
1 cup fresh pineapple chunks (fresh provides the best sweetness)
1 large red bell pepper, sliced into thick strips
Optional: 1 medium zucchini, sliced into half-moons (as seen in the photo)
The Glaze:
1/4 cup premium teriyaki sauce
1 tablespoon extra virgin olive oil
Garnish: Freshly chopped green onions and a sprinkle of sesame seeds
Preparation Steps
Marinate the Chicken:
In a bowl, lightly coat the chicken breasts with olive oil and half of the teriyaki sauce. Season with a pinch of salt and pepper.
Assemble the Foil Pouches:
Lay out two large sheets of heavy-duty aluminum foil. Place a bed of sliced zucchini and red bell peppers in the center of each sheet. Place one chicken breast on top of the vegetables.
Add the Sweetness:
Distribute the pineapple chunks generously over and around the chicken. Drizzle the remaining teriyaki sauce over the top of the pineapple and chicken to ensure a deep glaze.
Seal and Lock:
Bring the sides of the foil together and fold the edges tightly to create a leak-proof packet. Leave a small amount of space at the top for steam to circulate.
Cook to Perfection:
Oven: Bake on a tray at 200°C for 20–25 minutes.
Grill: Cook over medium heat for 15–20 minutes with the lid closed.
Air Fryer: Cook at 200°C for 15–18 minutes.

Carefully open the packets. For a professional look, garnish with a generous amount of chopped green onions.

The "Sear" Hack: If you want that charred look from the photo, you can quickly sear the chicken in a hot pan for 2 minutes per side before placing it in the foil.
