​Ingredients

​The Base:
​2 boneless, skinless chicken breasts (left whole or cut into thick medallions)
​1 cup fresh pineapple chunks (fresh provides the best sweetness)
​1 large red bell pepper, sliced into thick strips

​The Glaze:
​1/4 cup premium teriyaki sauce
​1 tablespoon extra virgin olive oil

​Preparation Steps
​Marinate the Chicken:
In a bowl, lightly coat the chicken breasts with olive oil and half of the teriyaki sauce. Season with a pinch of salt and pepper.
​Assemble the Foil Pouches:
Lay out two large sheets of heavy-duty aluminum foil. Place a bed of sliced zucchini and red bell peppers in the center of each sheet. Place one chicken breast on top of the vegetables.
​Add the Sweetness:
Distribute the pineapple chunks generously over and around the chicken. Drizzle the remaining teriyaki sauce over the top of the pineapple and chicken to ensure a deep glaze.

Bring the sides of the foil together and fold the edges tightly to create a leak-proof packet. Leave a small amount of space at the top for steam to circulate.

​Oven: Bake on a tray at 200°C for 20–25 minutes.
​Grill: Cook over medium heat for 15–20 minutes with the lid closed.
​Air Fryer: Cook at 200°C for 15–18 minutes.
