Grandpa’s 3-Ingredient Savory Corned Beef Bites

Yields: Approx. 18-20 bites | Prep time: 10 mins | Cook time: 15 mins

Ingredients

12 oz (340g) Corned Beef: Use high-quality canned corned beef or very finely chopped deli corned beef.
8 oz (225g) Swiss Cheese: Freshly shredded (Swiss provides that classic nutty flavor, though sharp cheddar works too).
1/2 cup Mayonnaise: This acts as the binder and ensures the "melt-in-your-mouth" texture.

Instructions

1. Preparation
Preheat your oven to 375°F (190°C).
Line a large baking sheet with parchment paper or a silicone baking mat to prevent sticking.
2. Mix the Base
In a medium mixing bowl, break up the corned beef with a fork until it is finely flaked.
Add the shredded Swiss cheese and the mayonnaise.
Mix thoroughly until the ingredients are fully incorporated and the mixture holds together when pressed.
3. Form the Bites
Using a small cookie scoop or a tablespoon, scoop the mixture and form it into small mounds (about 1 to 1.5 inches in diameter).
Place them on the prepared baking sheet, leaving about an inch of space between each. Do not flatten them; keeping them in "mounds" keeps the center creamy.
4. Bake to Perfection
Bake for 12–15 minutes.
The bites are done when the cheese has melted and the tops and edges are golden brown and slightly crispy.
Pro Tips for the Best Results
The Crust: If you want an extra crispy bottom, bake them on the lower rack of the oven for the last 3 minutes.
The Dip: While these are perfect on their own, they are incredible when served with a side of Thousand Island dressing or spicy brown mustard.
Add-ins: For a "Reuben" twist, you can add 1/4 cup of well-drained sauerkraut to the mix before baking.
Yum! These truly are the ultimate crowd-pleaser. Enjoy!
