Honey Garlic Chicken with Mushrooms

This dish is a perfect balance of earthy mushrooms and a sticky, sweet glaze. It’s quick enough for a weeknight dinner but tastes like a restaurant specialty.

Ingredients

2 chicken breasts: Sliced thin (for faster cooking and more surface area for the sauce).
1 cup mushrooms: Sliced (Cremini or Button work best).
2 tbsp honey: For that signature sweetness.
2 tbsp soy sauce: For a deep, savory umami flavor.
3 cloves garlic: Minced (don't be afraid to add an extra clove if you love garlic!).
1 tbsp olive oil: To sear the chicken.
1 tbsp butter: To give the mushrooms a rich, golden finish.
Salt & pepper: To taste.

Instructions

Season the Chicken:
Lightly season your thinly sliced chicken breasts with salt and pepper. Since soy sauce is salty, go easy on the extra salt.
Sear the Protein:
Heat the olive oil in a large skillet over medium-high heat. Add the chicken slices in a single layer. Cook for about 3–4 minutes per side until golden brown and cooked through. Remove the chicken from the pan and set it aside on a plate.
Sauté the Mushrooms:
In the same skillet, melt the butter. Add the mushrooms and sauté for 5 minutes until they release their moisture and turn a deep brown.
Aromatics & Sauce:
Stir in the minced garlic and cook for about 30 seconds until fragrant. Pour in the honey and soy sauce. Stir well, allowing the mixture to bubble and thicken slightly (about 1–2 minutes).
Combine:
Add the cooked chicken back into the skillet. Toss everything together so the chicken and mushrooms are thoroughly coated in the sticky honey-garlic glaze.
Serve:
Garnish with green onions or sesame seeds if you’re feeling fancy! This pairs perfectly over steamed white rice or quinoa.
Tip: If the sauce gets too thick too quickly, add a splash of water or chicken broth to loosen it up.
