Sugar-Free Apple & Cocoa "Magic" Cake
This flourless, sugar-free cake relies on the natural sweetness of apples and the structure of eggs to create a fudgy, brownie-like texture.
Ingredients
4 Medium Sweet Apples: (Fuji, Honeycrisp, or Gala are best for their high natural sugar content).4 Large Eggs: These provide the lift and structure since there is no flour.
5 tbsp Unsweetened Cocoa Powder: Use a high-quality cocoa for the richest chocolate flavor.
1 tsp Baking Powder: To give the cake a bit of fluffiness.
Olive Oil: Just a small amount for greasing the baking mold.
Instructions
Prepare the Apples:Peel and core the apples, then cut them into small chunks. For the smoothest texture, you can steam or microwave the apple chunks for about 5 minutes until soft, but many people prefer to blend them raw for a quicker version.
Blend the Base:
Place the apple chunks and the 4 eggs into a blender or food processor. Blend until the mixture is completely smooth and liquid.
Add Dry Ingredients:
Add the 5 tablespoons of cocoa powder and 1 teaspoon of baking powder to the blender. Pulse or blend again until the cocoa is fully incorporated and the batter is a uniform chocolate color.
Prepare the Mold:
Lightly grease a baking dish or silicone mold with a little olive oil. Pour the batter into the mold.
Bake:
Preheat your oven to 180°C (350°F). Bake for approximately 40–45 minutes. The cake is done when a toothpick inserted into the center comes out clean.
Cool and Set:
This is the most important step! Let the cake cool completely in the mold, then refrigerate it for at least 2 hours (or overnight). This allows the texture to set and become fudgy.
Serving Suggestion
Since there is no added sugar, you can top this with a few fresh berries or a dollop of Greek yogurt for a complete, guilt-free snack.
Tip: If your apples aren't very sweet, you can add a pinch of cinnamon to the batter to enhance the natural sweetness.
