š Ingredients:
For the Chicken Skewers:
500g (1 lb) boneless, skinless chicken breast or thighs, cut into cubes
2 tablespoons olive oil
2 garlic cloves, minced
1 tablespoon fresh ginger, grated
1 ripe mango, pureed
1 habanero pepper, finely chopped (adjust to taste)
2 tablespoons lime juice
1 tablespoon honey
1 tablespoon soy sauce
1 teaspoon smoked paprika
Salt and black pepper, to taste
Optional Add-ins for Skewers:
Red bell pepper chunks
Red onion chunks

Prepare the Marinade:
In a bowl, mix mango puree, olive oil, garlic, ginger, habanero, lime juice, honey, soy sauce, smoked paprika, salt, and pepper until smooth and well combined.
Marinate the Chicken:
Add chicken cubes to the marinade and toss until fully coated. Cover and refrigerate for at least 1–2 hours to absorb all the sweet and spicy flavors.
Assemble the Skewers:
Thread the marinated chicken onto skewers, alternating with bell pepper and onion if using.
Cook the Skewers:
Preheat grill or pan to medium-high heat.
Grill skewers for 10–15 minutes, turning occasionally, until chicken is cooked through and slightly charred (internal temp 75°C / 165°F).
Serve:
Remove from grill and let rest for a couple of minutes.
Serve hot with extra mango sauce or a squeeze of fresh lime.
