Prep time: 10 mins | Cook time: 15 mins | Total time: 25 mins
Ingredients
Self-Rising Flour: 2 cups (plus extra for dusting).Butter: ½ cup (115g) cold unsalted butter, cubed.
Cheddar Cheese: 1 ½ cups sharp cheddar, freshly grated.
Milk: ¾ cup whole milk (keep a tablespoon extra for brushing the tops).
Instructions
Preheat & Prep: Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper.Mix Flour & Butter: In a large bowl, sift the self-rising flour. Add the cold cubed butter. Use your fingertips or a pastry cutter to rub the butter into the flour until the mixture resembles coarse crumbs.
Add Cheese: Fold in the grated cheddar cheese until evenly distributed.
Form the Dough: Make a well in the center and pour in the milk. Mix quickly with a fork or knife until a soft dough forms. Do not overmix, or the scones will be tough.
Shape & Cut: Turn the dough onto a lightly floured surface. Gently pat it down to about 1 inch (2.5 cm) thickness. Use a round cutter to stamp out circles (don't twist the cutter, just press straight down).
Bake: Place the scones on the baking sheet. Brush the tops with a little milk and sprinkle a tiny bit of extra cheese if desired. Bake for 12–15 minutes until risen and golden brown.
Serve: Best served warm with a bit of butter!
