4-Ingredient Irish Potato Candy
These delightful, bite-sized treats are famous for their unique appearance and rich flavor. Despite the name, they don't actually contain potatoes—they are creamy, coconut-filled morsels that look just like tiny potatoes pulled from the earth.
Ingredients
Cream Cheese: 1 package (8 oz / 225g), softened to room temperature.
Butter: 1/2 stick (4 tablespoons / 55g), softened.
Powdered Sugar (Icing Sugar): 4 cups (approx. 500g).
Sweetened Shredded Coconut: 2.5 cups (approx. 200g).
For the coating: Ground Cinnamon (about 2 tablespoons).
Instructions
Cream the Base: In a large mixing bowl, beat the softened cream cheese and butter together until the mixture is completely smooth and fluffy.
Incorporate Sugar: Gradually add the powdered sugar one cup at a time. Beat on low speed until the sugar is fully incorporated and the mixture is stiff.
Add the Coconut: Fold in the shredded coconut using a spatula or wooden spoon. Ensure it is evenly distributed throughout the dough.
Chill (Optional but Recommended): If the mixture feels too soft to handle, place it in the refrigerator for 30 minutes to firm up.
Shape the "Potatoes": Scoop out small portions (about 1 tablespoon each) and roll them into small oval shapes to resemble tiny potatoes.
The Cinnamon Dusting: Place the ground cinnamon in a small bowl. Roll each candy "potato" in the cinnamon until lightly coated.
Pro Tip: Don't worry if they aren't perfectly uniform—real potatoes have bumps and ridges!
Final Set: Place the finished candies on a parchment-lined tray and refrigerate for at least 1 hour before serving to let them set completely.
Serving Suggestion
Store these in an airtight container in the refrigerator. They are best served chilled and make for a fantastic conversation starter at any gathering!
