🥗 Shrimp & Avocado Creamy Salad
🛒 Ingredients:
300 g cooked shrimp (peeled & deveined)
2 ripe avocados, diced
1/2 red onion, finely chopped
2 tbsp fresh parsley or cilantro, chopped
1/2 cup mayonnaise or Greek yogurt
1 tbsp lemon juice
Salt & black pepper to taste
Optional: lettuce leaves for serving
👩🍳 Instructions:
In a bowl, mix mayonnaise (or Greek yogurt) with lemon juice, salt, and black pepper until smooth.
Add the shrimp, diced avocado, red onion, and chopped parsley.
Gently toss everything together until well coated with the creamy dressing.
(Optional) Line a serving bowl with lettuce leaves, then add the salad mixture on top.
Garnish with extra parsley and a lemon wedge.
Chill in the refrigerator for 15–20 minutes before serving for the best flavor.
