1 kg (about 2 lbs) zucchini, sliced

1 onion, thinly sliced

60 g light goat cheese

1 egg

100 g fat-free fromage blanc (or Greek yogurt 0%)

1 sheet puff pastry (light version if possible)

Salt and pepper to taste

Optional: herbs (thyme, oregano, or basil)

Preheat the oven to 180°C (350°F).

Cook the vegetables

In a large pan, sautรฉ the sliced onion for 2–3 minutes.

Add the zucchini, season with salt and pepper, and cook for about 10–15 minutes until soft and slightly golden. Let cool slightly.

Prepare the filling

In a bowl, mix the egg with the fat-free fromage blanc.

Add the cooked zucchini and onion mixture, then stir well.

Assemble the tarte tatin

Lightly grease a baking dish or pan.

Spread crumbled goat cheese evenly on the bottom.

Pour the zucchini mixture over it.

Cover with the puff pastry, tucking the edges inside.

Bake

Place in the oven and bake for about 30–35 minutes, until the pastry is golden brown.

Serve

Let it cool for a few minutes, then carefully flip it onto a plate.
