Total Time: 35 minutes
Servings: 2
đź›’ Ingredients
The Base & Protein:
Chicken: 300-400g chicken breast or thighs, cut into bite-sized pieces.
Rice: 1 cup white rice (Basmati or Jasmine work best).
The Vegetables:
Asparagus: 1 bunch of fresh asparagus, trimmed.
Tomatoes: 1 cup cherry tomatoes (halved) or 1 medium tomato (diced).
Onion: ½ small yellow onion, finely diced.
The Creamy Lemon Sauce:
Garlic: 3 cloves, minced.
Butter: 2 tablespoons.
Heavy Cream: ½ cup.
Lemon: Juice of half a lemon (plus zest for extra flavor).
Herbs: Fresh parsley or cilantro, chopped.
Seasoning: Salt and black pepper to taste.
👩🍳 Instructions
Prepare the Rice: Rinse the rice until the water runs clear. Cook according to package instructions and keep covered to stay warm.Sear the Chicken: Season chicken pieces with salt and pepper. Heat a drizzle of oil in a skillet over medium-high heat. Cook the chicken until golden brown and cooked through (about 5–7 minutes). Remove from the pan and set aside.
Make the Sauce: In the same skillet, melt the butter. SautĂ© the onions until translucent, then add the garlic for 1 minute until fragrant. Stir in the heavy cream and lemon juice. Let it simmer for 2–3 minutes until it thickens slightly.
SautĂ© the Veggies: Toss the asparagus and tomatoes into the pan with the sauce (or sautĂ© them separately if you prefer them very crisp). Cook for 3–4 minutes until the asparagus is bright green and slightly tender.
Assemble: Place a generous scoop of rice in each bowl. Top with the golden chicken and the vegetable-sauce mixture.
Finish: Garnish with fresh herbs and an extra squeeze of lemon if desired. Serve immediately.
đź’ˇ Tip
A pinch of chili flakes adds a nice heat contrast to the creamy lemon sauce. If you prefer a lighter version, you can swap the heavy cream for coconut milk or a splash of chicken broth.
