​1 lb (500g) Sirloin or Ribeye steak, cut into 1-inch cubes
​2 tbsp Soy sauce (for umami)
​1 tbsp Sriracha or Chili garlic sauce (adjust for heat)
​1 tbsp Honey or Brown sugar (to balance the spice)
​1 tbsp Olive oil or Sesame oil
​3 cloves Garlic, minced
​1 tsp Fresh ginger, grated
​1/2 tsp Red chili flakes (optional, for extra heat)
​Garnish: Sliced green onions and toasted sesame seeds

​Instructions

​1. Prepare the Marinade
In a medium bowl, whisk together the soy sauce, sriracha, honey, oil, garlic, ginger, and chili flakes. This mixture will tenderize the beef while infusing it with deep flavor.
​2. Marinate the Beef
Add the beef cubes to the bowl. Toss well to ensure every piece is coated. Cover and refrigerate for at least 30 minutes (or up to 4 hours for a deeper flavor).
​3. Sear to Perfection
Heat a large cast-iron skillet or non-stick pan over high heat. You want the pan smoking hot to get a good crust. Add the beef in a single layer (do not overcrowd the pan; cook in batches if necessary).
​4. The Quick Cook
Let the bites sear undisturbed for 2 minutes to get a dark, caramelized crust. Toss and cook for another 2–3 minutes until the edges are charred but the center remains juicy.
​5. Glaze and Serve
If there is leftover marinade in the bowl, pour it into the pan during the last 60 seconds of cooking to create a sticky glaze. Transfer to a plate and top with green onions and sesame seeds.
